Welcome to Shinobu Distillery, a gem nestled in the heart of Niigata prefecture, Japan, renowned for its pristine “water source,” “white rice,” and “sake.” Founded by the visionary brewer and whisky enthusiast, Ken Usami, also behind Niigata Beer Co. Ltd., our distillation house stands as a testament to the passion and innovation that defines our craft.

Mr. Usami, a pioneer in his field, introduced groundbreaking techniques such as secondary bottle fermentation and aging, setting a new standard for Niigata Beer. With a dream of creating a local whisky haven that celebrates the region’s pure water, Mr. Usami embarked on a journey that led to the acquisition of Niigata’s first whisky license in 2017, marking another historic milestone.
